Cauliflower Tacos

I’ve been seeing so many creative tacos lately that I decided to create my own. These tacos use a cauliflower, bean and corn filling on corn tortillas with lots of garnishes. They are a crunchy and delicious vegan alternative to your standard taco.

Ingredients:

1 head cauliflower

1 can black beans

1 can sweet corn

1 chipotle pepper

2 tsps poblano seasoning

1-2 tbsp taco seasoning

corn tortillas

Garnishes:

White onion diced

Lettuce shredded

Tomato chopped

Avocado sliced

Bell pepper diced

Cilantro chopped

Pickled jalapenos

Vegan Shredded cheese

Directions:

  1. Chop head of cauliflower into small pieces.
  2. Put 1 tbsp of vegetable oil into pan on medium heat
  3. Add cauliflower to heated pan and cook for 5 minutes
  4. Add chopped chipotle pepper, beans, corn and seasoning to pan
  5. Let these ingredients cook for about 10 more minutes, stirring occasionally
  6. Put corn tortillas on grill to heat up
  7. Add taco filling to tortillas and top with garnishes along with your favorite salsa or hot sauce
